Hi friends! Hope you’re all enjoying this long holiday weekend! We’re in Charleston, SC, taking a break from the weekend renovation routine and enjoying some beach time and of course eating lots of yummy things – yesterday we went here and here. So good! I just wanted to pop in and tell you guys about this granola. I’ve been making it once a week! It has become part of our breakfast routine – the perfect thing with yogurt and seasonal fruits. I used to think granola was super complicated, I don’t know where I got that from! It’s like the easiest thing ever and with an extra day in your weekend you can totally make this! I’ll post a little recap of our mini vacay soon, just like I did here last year.
Ingredients
1/2 cup olive oil
2/3 cup maple syrup
3/4 teaspoon cardamom
1 teaspoon cinnamon
3.5 cups old-fashioned oats
2 cups crispy rice cereal
1/2 cup pumpkin seeds
1 cup sunflower seeds
3 tablespoons seed mixture, like chia, hemp or sesame
Directions
Preheat the oven to 325F. Mix the liquids and spices together in a large bowl, dump in the dry ingredients and mix well. Evenly spread the mixture out on a baking sheet and bake for 40 to 45 minutes or until toasty and fragrant. Set aside to cool and I like to store mine in glass jars with lids.

I still can’t believe that I’ve never tried making granola with crisp/puffed rice. When we were in Hawaii, every smoothie bowl and granola bowl we ate had the little rice crisp bits and it was so good! I love how you styled this in that tidy line across the top of the bowl–very slick! xo

Ooh Grace, this granola looks so good! I need to try this puffed rice idea, I bet that adds such a nice crispy texture. Enjoy Charleston, that’s definitely a place I’d love to visit at some point 🙂
I love that you used puffed rice!! I used to love puffed rice cereal when I was a kid, and it seems like such a natural addition to granola! 🙂
